Ingredients:
- 1 bunch of spinach washed
- 1 liter milk
- 2 liter water
- 1 tbsp butter
- 1 tbsp garlic paste
- 2 tbsp flour
- Pepper
- Salt
Preparation:
1. Boil the water, and add a little salt.
2. When the water bubbles, add your spinach and let it boil for fifteen minutes.
3. When your spinachs are ready, put them in your blender + save about a cup of the spinach stock, and throw the rest away.
4. In a pot, melt the butter at medium heat then add the garlic paste.
5. Add the flour to the garlic-butter and let it get a little brown.
6. Add the milk, the pepper and stir it until it gets a creamier texture.
7. Looks familiar may be? Yeah, same preparation as white sauce (but a little more liquid I guess;) - once your white sauce is almost ready, blend your spinach and add it to the sauce + add the spinach stock.
8. Stir it all a little bit, add your salt and once it's warm, serve it with some crackers.
This soup was made last saturday for the Good Soup Exchange, an event by Tahsin from Tahsin The Good - read more about her soup exchange here + my review is here.
