White Mousse (in 5min!)
Ingredients:
- 1l whipping cream
- 1 can of sweet condensed milk
- 1 tsp vanilla essence
- raspberries to decorate
Preparation:
1. Pour all the ingredients in a bowl except the raspberries.
2. Whisk the ingredients with an electric mixer till the batter becomes thick and smooth.
3. Pour the mixture in a dessert dish or in individual cups and decorate them with the raspberries.
4. Refrigerate about an hour and enjoy!
Sn-Comments:
* For ice rosettes : use a pouch to form rosettes in a muffin pan, decorate them and place it in the freezer for a few hours. p.s: use a silicon mold if you have one, it will be easier to remove the rosettes! :)

Waffle Pops (egg-free)
Ingredients:
- 200g flour
- 100g sugar
- 1 tsp baking powder
- 10g vanilla sugar
- 200 ml sparkling water
- 1 tsp baking powder
- 10g vanilla sugar
- 200 ml sparkling water
- 2 tbsp oil + some for the waffle machine
Préparation:
1. In a bowl, mix all the dry ingredients.
2. Add the oil and the sparkling water and mix till the batter is smooth and has no lumps.
3. Heat your waffle machine, pour your batter and let the waffles cook for a few minutes, until they become golden. Repeat till you finish the batter.
4. Put your waffles through the sticks, spread some Nutella or any topping you want on, and enjoy!
Sn-Comments:
* You certainly guessed that the envy of waffles came to us when we were running out of eggs at home... but I thought the result was even better!
* I have a special waffle-pop machine. If your machine makes square or rectangular shapes, cut them half!

French Toast - Peanut Butter & Jam
Ingredients:
- 10 bread slices
- Peanut Butter
- Raspberry Jam (or any of your choice)
- 3 eggs
- 4 tbsp sugar
- 1 tbsp cinnamon powder
- 2 tbsp butter
Preparation:
1. Start by spreading peanut butter on 5 of your bread slices, then your jam on the other 5 slices.
2. Combine each peanut butter bread slice with the jam slices to make a peanut butter and jam sandwich. Cut each sandwiches in 4.
3. In a bowl, beat your eggs and in another bowl, mix the sugar and the cinnamon powder.
4. In a pan, melt the butter at medium heat.
5. Dip each of your peanut butter and jam pieces into the eggs, make sure they are entirely covered and place them in your hot pan.
6. Let your toast pieces fry about 2-3 minutes on each side until they're golden then dip them in the cinnamon sugar, cover them entirely and place them in a plate.
7. Repeat the process until all your peanut butter and jam french toasts are ready. enjoy!
Sn-Comments:
* If you're not a peanut butter and jam fan, you can replace it with anything you like or just make it plain. but, p.s: nutella ones are to die for!
* I had some leftover sandwiches in my fridge, which I used for this recipe. great way to recycle the sandwiches you didn't eat the day or two before. + works for savoury sandwiches as well ! just dip them in some spice/herb/cheese instead of the cinnamon sugar :)

Chocolate Fudge
Ingredients:
- 2 cups chocolate chips
- 3/4 cup sweet condensed milk
- a handful of toffee bites
- a pinch of salt
Preparation:
1. Prepare a pan and put a foil in it to create a handle (to remove the fudge easily)
2. In a double boiler, melt the chocolate chips with the sweet condensed milk and the salt, and mix it all well.
3. Once melted properly, pour the mixture in the tray and let it chill.
4. Sprinkle the toffee bites and press them gently with the back of a spoon then refrigerate for about an hour, until it gets firm.
5. When ready, lift the edges of the foil paper, place your fudge in a plate and cut it in squares or the shape of your choice.
6. Let it melt in your mouth, enjoy!

Raspberry Cheesecake (in a cup)
Ingredients:
- 1 cereal bar flavored
with berries or raspberries
- Some sweet cream cheese
- 1 pinch of vanilla
- Some raspberries
Preparation:
1. In a bowl, whisk your
sweet cream cheese with the vanilla until it makes a smooth cream. (For the
sweet cream cheese recipe, click here)
2.
In your cup/bowl, crumble your cereal bar in the bottom, pour the cream on top,
decorate, refrigerate an hour or two, and it's ready! :)
Sweet Cream-Cheese
Ingredients:
- 200g cream cheese (e.g Philadelphia)
- 2 tablespoons heavy
cream
- 200g icing/confectionary
sugar (more or less depending on your taste)
Preparation:
- In a bowl, lightly beat
the cheese to soften it a bit.
- Add the heavy cream and
continue to beat two or three minutes, then gradually add the icing sugar until
everything is well mixed, the sugar no longer forms clumps and the cream is
smooth.
- Once ready, you can
refrigerate and store your cream to use it later.

The cream cheese makes a delicious topping for carrot cake or red velvet. It is
perfect for a fruity desert, and above all, for a delicious cheesecake! You
will see in further recipes!

Crêpes - 1
- 100g flour
- 2 eggs
- 2 tbsp butter (+2 tbsp for the pan)
- 200ml of milk
- 100ml of water
- 3 tbsp sugar
- 1 pinch salt
- Vanilla essence
Preparation:
1. In a bowl: mix the flour, salt, and eggs with a wooden spoon until forming a soft dough.
2. Incorporate progressively the milk, the water and the melted butter and mix with a whisk or a hand mixer.
3. Warm your stove over medium heat, and grease with butter.
4. Once the pan is hot, pour in some of your batter and immediately have it travel around to create your crepe.
5. Make sure to pass a spatula around the edge of the crepe to prevent it from sticking, and flip it when one side is cooked.
6. Grease your pan between each crepe, and stack those made on a plate. Sprinkle with icing sugar, or garnish them with your favorite topping and enjoy you!

Beetroot Halwa
Ingredients:

3 large grated beets
-
1 handful of chopped almonds
-
1 handful of chopped pistachios

100 ml evaporated milk
-
100 ml of sweetened condensed milk

2 tbsp. of butter
-
6 cardamom pods
Preparation:
1.
In a large pot, melt the butter then add the seeds of your cardamom, the almonds
and pistachios (keep some aside for garnishing) and cook for 1 to 2min on medium, stirring occasionally.
2.
Add the grated beets, then both kinds of milk and mix. Cover your pot and let
it all stew for about fifteen minutes.
3.
Past the 15 minutes, remove the lid and stir again, then let it simmer until
the beets are fully cooked and the liquid has more or less evaporated. If
needed, you may add a little water.
4.
Once your halwa is ready, transfer it to your dish and decorate with the almonds
and pistachios you kept aside. Let it cool down a just a few minutes, and
enjoy! You can have it completely cooled, or have it when still slightly warm
(or heat it a little before eating). I personally prefer it slightly warm,
makes it more delicious!
Nutella Crêpes
Ingredients:
- 250g flour
- 300ml cold milk
- 1 tbsp. icing sugar
- 1 egg
- Nutella
- 300ml cold milk

Preparation:
1. In a bowl, mix the flour and icing sugar then form a well in the centre and break your egg in.
2. Using a whisk or a hand mixer, mix the egg with the flour and gradually add the milk until the batter is smooth and has no lumps.
3. Heat a pan and when hot, grease it with or spray some oil.
4. Pour your batter using a ladle on the and tilt your pan in a circular motion to spread your batter evenly and to form your crepe.
5. Let it cook for about a minute on each side and go around the edges with a spatula to make sure your crepe does not stick.
6. Once your crepes are ready, spread Nutella on them and enjoy!
